Blueberry Cheesecake

我做了次這個 Cheesecake 三次, 次次 LG 也說好味!




Blueberry Cheesecake
(食譜來源: vyvy blog)

材料︰(8吋蛋糕份量)
Cream cheese 250g
Whipping cream 200ml
魚膠粉 2茶匙
水 3湯匙
砂糖 80g
檸檬汁 2.5湯匙
blueberry 約2湯匙(用叉壓爛)
消化餅 140g
溶化牛油 60g

做法:
1. Whipping cream打發起,放入雪櫃待用
2. 消化餅弄碎,加入溶化牛油拌勻,放入8吋餅盆內壓實
3. 用碗盛載魚膠粉,用水調勻,座於熱水上使其溶解(或放入微波爐叮約10秒)
4. Cream cheese用打蛋器打至滑,加入糖打勻
5. 加入魚膠粉水和檸檬汁及blueberry拌勻
6. 加入已打發之忌廉再拌勻,倒入餅模內
7. 放入雪櫃雪至凝固,隨意加上裝飾

2. Whipping cream係咪用sealtest果種.
3. "2茶匙"魚膠粉,用"3湯匙"水調勻?
4. 檸檬汁係去買定自己整?

Hi Grace,

1. re brand for cream cheese, i either use the Kraft Philadelphia one, or PC Blue menu one.. depending on which one is cheaper.. :)
2. i bought the small carton one..

溶化牛油係咪姐係放舊牛油係room temperature溶化?

yes.. to speed up the process.. u can cut the butter into smaller pieces.. or microwave it for couple seconds..

sorry我又有問題了
你係咪用一個圚形蛋糕模黎整架? 咁雪完點拎出黎?? 我知有D模個底可以甩出黎比你拎個蛋糕出黎.
但係我個心形模無啊. 可唔可以用保鮮紙放係底, 雪硬左就扯保鮮紙咁拎個蛋糕出黎?

你個模係點架?

我用6"圚形模.. 用牛油紙放係底.. 再加 Cake release.. re 消化餅, it doesn't really matter.. cream cheese should be the first thing in the bowl.. :)
